Description

Yesica Moreno’s Chiroso was a crowd favorite last year for its bright and brash fruited profile, so we’re excited to have it back on our menu for another season. Yesica’s farm, El Rosal, is located at 1,950 masl in Urrao, an area of Colombia known for its cultivation of the Chiroso variety. Like Pink Bourbon, Chiroso is an Ethiopian landrace variety with very high cup quality potential across a diverse range of cup profiles. As with many other producers in the region, Yesica ferments her coffee using the cochadas method, a regional processing practice in which each day’s harvest is depulped and added to the same fermentation tank over the course of the week until it is full. Her coffee presents some of the fermented fruit flavors of a naturally processed coffee, but with more acidity, riper flavors, and structured sweetness. We taste bright tropicals, like grilled pineapple and passionfruit, and syrupy strawberry.
