Description
After being harvested, this Pink Bourbon from Luis's farm, Buenos Aires, is rested in cherry for 24 hours (you can likely thank this rest period for those nice mango notes) before being pulped. It is then fermented for a full 50 hours before washing. Finally it is dried in a solar drier for 20 days. This is our first time working with Luis and based on the quality of this lot we truly hope that it is just the beginning of a long and fruitful relationship.
