La Bohemia (GREEN)

La Bohemia has been owned and operated by husband and wife duo, Carlos and Raquel Lasso for the past 30 years. After tasting their coffee, I was not the least bit surprised to find out that their farm is located at a most ideal altitude of almost 2000 meters above sea level. Carlos and Raquel split the farm duties with Carlos focusing on processing which leaves Raquel free to work on innovative projects that can be a source of income when the coffee harvest is over. For this Bourbon lot, Carlos mills then ferments the coffee in mucilage for 4 days in mosto until the mosto tastes, in Carlos' own words, "...like a good wine." The coffee is then washed with very little water before it is sun-dried on raised beds. The coffee is wild in all the best ways - bursting with tropical fruits and florals without a hint of funkiness.
