Faver Ninco - Santa Maria, Huila, Colombia

This is the first of three Pink Bourbon lots we’ll be featuring from the main harvest at Finca Costa Rica, Faver Ninco’s 10-hectare farm in Santa Maria. At just over 2,000 masl, Finca Costa Rica experiences cooler temperatures than much of the region, with more limited sunlight and less regular rainfall. These factors combine to produce more sporadic flowering and nearly year-round picking. Within that fluid cycle, Finca Costa Rica still has a defined main harvest season that runs from May to August, with this first lot coming from the early and peak portions of the harvest. This coffee presents with layered flavors, brisk acidity, and light florality, with notes of bright red fruit, herbal tea, and honeyed sweetness.
